Gluten Free Brownies

Brownies!!!! (Triple choc cranberry of course) but gluten free, and no i didn’t just use gluten free flour, i used what i had in my pantry –  besan (chickpea flour) and tapioca starch….

What you’ll need

  • 125g unsalted butter
  • 3/4 cup sugar
  • 2 eggs
  • 1tsp vanilla essence
  • 1/4-1/3 cup cocoa poweder
  • 1/2- 3/4 cup flour (use half the quantity of each – besan and tapioca)
  • 1/4 tsp salt
  • 1/2-3/4 Tbsp baking powder
  • Dark and White  choc chips
  • Cranberries
  • espresso powder

Method

  1. Combine all dry ingredients (including choc chips and cranberries) in a large bowl
  2. Melt butter and add to the mixture and give a light mix
  3. Add eggs and mix thoroughly
  4. If more liquid is required add another egg or a touch of milk
  5. Pour into your desired tray and bake
  6. YUM
